Broccoli Rabe is an acquired taste, you either love it or hate it. Although I am a rarity as I love it depending on the way it is made. Sometimes it’s called bitter broccoli cause it can be very bitter or Rapini. Years ago you only could get it in Italy but it’s now it’s widely available throughout the world. Sometimes it’s served with sausages but tonight I will just be serving it sauteed with a bit of garlic, olive oil and butter.
1-2 tablespoons extra virgin olive oil
2 cloves garlic, sliced
1/2 teaspoon crushed red pepper flakes
1 large bunch broccoli rabe, chopped
Salt and pepper to taste
Heat oil and butter in a large skillet over medium heat. Add garlic and cook 1 minute. Add broccoli rabe and Cook 3 to 5 minutes, or until wilted. Tossing with the garlic, butter and oil. Add the water and bring to a boil. When it boils, cover and lower the heat and cook for 10 minutes until it’s crisp tender Season, to taste, with salt and black pepper.
