This recipe is perfect for bbq’s and picnics. It’s very easy to make as you just have to cook the rice and then add everything together.
Curried Rice and Pea Salad
1 tbsp. cider vinegar
2 tbsp. light olive oil or canola oil
3/4 cup light mayonnaise (you can use regular, if you want)
1 1/3 cups hot cooked rice
1/2 tsp. curry powder
2 tbsp. chopped red onion
1 cup chopped celery
1 (10 oz) pkg frozen peas defrosted
salt and pepper, to taste
Mix vinegar, oil, mayonnaise, curry powder, salt and pepper into a medium bowl. Add the cooked rice to the dressing mixture and then add the onions. Let cool for about a half hour and add the celery and peas. Mix well and chill. This is even better the next day.
