I normally don’t care much for tuna salad but I didn’t know what I wanted for lunch and I thought about making a zesty Mediterranean tuna salad which turned out quite good. I also love the flavor combination of the fresh herbs, artichoke hearts and capers. If you want to see how I made it, keep reading.
2 (5 oz) cans solid white tuna in water, drained
2 heaping tbsp. fat free or light mayonnaise (you can use regular if you want)
3-4 marinated artichokes roughly chopped
1 tbsp. capers, drained
2 tbsp. fresh basil, chopped
1 tbsp. fresh rosemary chopped
1/4 tsp. freshly ground black pepper
dash of Sriracha hot sauce, more if you like it real spicy
Mash tuna in a medium bowl. Add the rest of the ingredients and mix well. Chill for about 30 minutes to an hour and serve.
