It’s no secret that I love my fresh vegetables and broccoli is definitely a big favorite of mine. I can basically eat it any way, including steamed but if I want my family to eat it, then it has to be cooked with some flavor. So when I saw this version in the latest issue of Cooking Light magazine, it takes plain broccoli up to the next level by adding some more fresh produce, oranges and orange zest. It is very easy to make and is perfect for a weeknight side dish. To see how it’s made, keep reading.
4 cups steamed broccoli florets, you want them crisp-tender
2 tbsp. orange juice
1 tbsp. honey
1 tsp. fresh grated orange zest
1/2 cup orange sections
2 green onions, chopped
salt and pepper, to taste
In a large glass measuring cup add the orange juice, honey, salt and pepper and mix well. To a bowl add the broccoli, orange sections, green onions and toss well. Pour the dressing over and sprinkle on the orange zest.
