I love the peppery flavor of arugula and I was just experimenting and it goes really well with the sweetness of this Vinaigrette.
Arugula with an Apricot Lemon Vinaigrette
2 tbsp. Apricot preserves
1 tsp. lemon zest
juice of half a lemon
1/4 cup light olive oil or canola oil
pinch of salt and pepper.
10 oz. bag baby Arugula
Mix all the ingredients together in a small bowl and pour over the arugula and serve.
