I was thinking of something fun to make for dinner and I came up with these. The Endive Bites could actually be made as an appetizer for a party as they are really good finger foods and not messy to eat at all. The Lettuce Wraps are a bit more messy so would be good as a sit down appetizer or a main course.
Asian Endive Bites and Asian Lettuce Wraps
Serves 4-6
Ingredients
1 tbsp. canola or vegetable oil
1 1/2 lbs ground beef, turkey or chicken (I used 93/7% ground beef)
2-3 garlic cloves, minced
1 tbsp. fresh ginger, minced
2 green onions, sliced
2 tbsp. lite soy sauce
2 tbsp. hoisin sauce
1 head of red leaf lettuce
2 heads of endive
1 tbsp. rice vinegar
1 tbsp. sesame oil
Directions
Heat oil in a non stick skillet or large pot over low heat and add ground beef, turkey or chicken, garlic and ginger, green onions and cook until meat is browned; about 5 or 6 minutes, breaking up any large bits. Add about 1 tbsp. of the soy sauce. Mix well.
Combine hoisin, soy sauce, rice vinegar in a small bowl, stirring with a whisk. Spoon a couple tablespoons of the meat mixture into each lettuce leaf and about a tablespoon into the endive leaf. Serve with extra sauce.
