I absolutely love shrimp and since I have been on Weight Watchers I have been eating a lot of it because it’s very low in WW points. You can serve this as an appetizer or as a main course. I had it as a main course and it came out fantastic. My family loved it. As you can see from the picture, I served it with some plain white rice and steamed broccoli.
Baked Orange Coconut Shrimp
Serves 6
Ingredients
1 1/2 lbs. extra large shrimp, peeled and deveined
3/4 cup plain panko bread crumbs
3/4 cup sweetened shredded coconut
1/4 cup all purpose flour
1-2 large eggs
pinch of salt
non stick cooking spray
Spicy Orange Dipping Sauce
3/4 cup orange marmalade
pinch or more of crushed red pepper flakes
1 1/2 tbsp. rice wine vinegar
Combine all sauce ingredients.
Directions
Preheat your oven to 425 degrees. Either spray a baking sheet with cooking spray or use the non stick aluminum foil.
In a large bowl combine the coconut and panko crumbs. Place the flour and the beaten eggs in separate dishes. Dip the shrimp in the flour, then the egg and then the coconut crumb mixture.
Place the shrimps on the baking sheet and spray with the cooking spray. Bake for about 7 minutes, then turn the shrimps over, spray them again and bake for another 5 minutes or until the coconut on the shrimps are golden brown. Serve with the orange dipping sauce.
