Here is another Thai recipe. It is made with a fish called Swai which is similar to Tilapia and just as good. I absolutely love Thai food and the Red curry paste gives it such a great flavor. If you don’t like it that spicy, then you can add less. I like mine with a bit of a nice bite but not where I can’t enjoy the flavors of the dish. I served it over Israeli couscous.
1 tablespoon canola or vegetable oil
1 large onion, sliced
2 bell peppers, sliced
1 tablespoon fish Sauce
1 tablespoon Red Curry Paste
1-13.5 oz can Coconut Milk
4 tilapia fillets
Preheat oven to 350
Heat oil in a large Dutch oven over medium heat. Add onions and peppers. Stir fry until tender but not mushy.
Add the fish sauce and curry paste to the vegetables. Cook, stirring constantly, until the paste is dissolved. Add the coconut milk and bring to a boil.
Sprinkle fish with salt and pepper and add to a baking dish. Bake for 20 minutes or until done. Add sauce and vegetables on top of the fish.
