1 tablespoon canola or vegetable oil
1 large onion, sliced
2 bell peppers, sliced
1 tablespoon fish Sauce
1 tablespoon Red Curry Paste
1-13.5 oz can Coconut Milk
4 tilapia fillets
Preheat oven to 350
Heat oil in a large Dutch oven over medium heat. Add onions and peppers. Stir fry until tender but not mushy.
Add the fish sauce and curry paste to the vegetables. Cook, stirring constantly, until the paste is dissolved. Add the coconut milk and bring to a boil.
Sprinkle fish with salt and pepper and add to a baking dish. Bake for 20 minutes or until done. Add sauce and vegetables on top of the fish.
