I love balsamic vinegar and I make a quick vinaigrette with it. I used to put some sugar in it but it was sort of gritty so I started to use honey and it is much better. My friend Mary asked me if I had a recipe for a balsamic vinaigrette, so Mary here it is. I hope you enjoy it.
Makes about 1 cup
1/4 cup balsamic vinegar
1/2 cup olive oil
1 small garlic clove minced (or more if you like a lot of raw garlic)
1-2 tbsp. Dijon mustard
2 tsp. honey
salt and pepper to taste
Mix all ingredients together in a small bowl or jar and shake well. Let the flavors mingle for a while and then drizzle over mixed greens.
