I never thought to make Carrot Puree but I saw it on a cooking show once and I thought that it would go great with mashed potatoes.
Carrot Puree
Serves 6
Ingredients
5 large carrots
1 tbsp. butter
1/4 cup half and half
1 tsp. sugar
salt and pepper to taste
Directions
Cook carrots in boiling water until very soft, about 15 minutes. Puree in a food processor or blender adding the butter, half and half, sugar and salt and pepper.
Anything with half n’ half has got to be good. Looks good Sandi!

That came out beautifully. I grew up on my comfort food which was mashed potatoes and mashed carrots together. I was thinking that pureed carrots with the potatoes would make an awesome dish.
