People who know me personally know that I don’t do much baking at all, but once in a while I like to give it a try. We all need a little sweetness in our lives every so often. I got this recipe from a friend of mine who said it was quite easy to make, and it is. It comes out moist and light and goes perfect with coffee or tea. Cinnamon Raisin Coffee Cake
Serves 16
Ingredients
2 cups flour 1 cup sugar – or a bit more 2 eggs 1 stick butter ¼ teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon vanilla 16 oz. sour cream
Combine all ingredients.
Topping:
2 teaspoons vanilla 2 teaspoons cinnamon ½ cup sugar
Directions
Preheat oven to 350 degrees.
Spray a Bundt pan or regular aluminum pan with non stick cooking spray. Sprinkle in ½ of the topping. Put ½ of the batter in the pan. Sprinkle the rest of the topping. End with the last ½ of the batter Bake at 350 for 1 hour.
