Who doesn’t love potatoes, not very many people that I know. Potatoes are such a versatile food and go with most everything not to mention that they are quite good for us. This recipe is Curried Potatoes. The flavors are Indian and go perfectly together. There are many health benefits to having curry in the diet. This simple yet elegant potato recipe will go perfectly with beef, chicken or fish. I used red skin potatoes and left the skin on for some added nutritional value. If you love the flavors of Indian cuisine, you will certainly love these potatoes!
Curried Potatoes
Serves 6
Ingredients
2 lbs. red skinned potatoes
1 tbsp. olive oil
2 tbsp. coriander seeds
2 tsp. ground tumeric
2 tsp. curry powder
salt and pepper, to taste
2 tbsp. chopped fresh cilantro
Directions
Place potatoes in a large pot with salted water and bring to a boil. Once boiling, reduce heat to a slow boil and cook until potatoes are done. Approximately 10-15 minutes.
In a large non stick Dutch oven heat the oil over medium heat saute the coriander seeds, tumeric and curry powder for about a minute. Add the potatoes and mix with the spices. Add salt and pepper. Cook until potatoes start to brown a bit. Serve on a platter garnished with the cilantro.
