It’s very easy to make as you just have to cook the rice and then add everything together. It’s a great side dish to make for company because it can be made a day in advance. Curried Rice and Pea Salad
1 tbsp. cider vinegar
2 tbsp. light olive oil or canola oil
3/4 cup light mayonnaise (you can use regular, if you want)
1 1/3 cups hot cooked rice
1/2 tsp. curry powder
2 tbsp. chopped red onion
1 cup chopped celery
1 (10 oz) pkg frozen peas defrosted
salt and pepper, to taste
Mix vinegar, oil, mayonnaise, curry powder, salt and pepper into a medium bowl. Add the cooked rice to the dressing mixture and then add the onions. Let cool for about a half hour and add the celery and peas. Mix well and chill. This is even better the next day.
