Curry powder is a mixture of spices and not “one” spice as some people might think. The ingredients in the blend that I use are: coriander, tumeric (which gives it the yellow coloring), fenugreek, mustard flour, cumin, gingerroot, black pepper, allspice, cayenne and fennel.
Easy Chicken Curry
1-2 tbsp. canola or vegetable oil
1 medium onion, sliced
1/3 cup black or golden raisins (optional)
1 tbsp. curry powder
1 1/4 lbs. thin sliced boneless, skinless chicken breasts
1 cup sour cream
salt and pepper, to taste
cilantro or parsley, for garnish
Add oil to a large skillet over medium heat. Add the onions, some salt and pepper and stir. Cook for about 7 minutes. Add raisins (if using), and cook for another 2 minutes, stirring occasionally. Add half the curry powder to the mixture and continue to cook for a minute or two, stirring.
Season chicken on both sides with salt, pepper and the rest of the curry powder. Push the onions to one side of the pan and add the chicken to the other side. Trying to keep them in one layer. Cook for about 3 minutes on each side until mostly cooked through. Remove from pan and set aside.
Lower heat and add in the sour cream and stir in with the onions. Add back the chicken and coat the chicken with the onions and sauce. Cook for another couple of minutes. Sprinkle with cilantro or parsley. Serve.
