I originally made this with chicken Indian Chicken Kebab Rolls on a Stick but I wanted to try it with beef. This recipe was delicious and I served with with Mint & Cilantro Chutney. They are best made on an outdoor BBQ but you could certainly make them on an indoor grill pan or even broil them in the oven. Ingredients
1 lb. ground beef
1 tsp. ground Turmeric
2 tsp. ground Cumin
2 tsp. Garam Masala
2 tsp. ground Cinnamon
2 tsp. ground Coriander
4 cloves of garlic, minced
1 tbsp. fresh ginger, minced
1/4 tsp. cayenne pepper, or to taste
2 tbsp. mango chutney (I used jarred)
1 egg
1 tsp. salt
Mint & Cilantro Chutney (recipe below)
Wooden skewers, soaked in water for at least 30 minutes
Mint & Cilantro Chutney
Ingredients
2 cups fresh mint
2 cups fresh cilantro
1 tbsp. fresh lemon juice
1/2 small onion
1/4 cup water
1 tsp. salt
1/2 tsp. pepper
Directions
Combine all ingredients until smooth but still with a little chunkiness to it. You may need more or less water depending upon the consistency you want.
Directions for kebabs
Combine all ingredients except the Mint & Cilantro Chutney. Mix well to combine. Cover and refrigerate for at least 2 hours so the flavors can meld together.
When ready to make, form ground beef into meatballs and then shape into oval shapes as in the above picture. Slide skewers into the kebabs. 2 per skewer. Grill on high heat covered for 1-2 minutes per side to sear meat. Lower heat to medium low and open cover. Continue to grill for another 5-7 minutes, until done. If you want them more well done, leave on for another minute or two. Serve with the Mint & Cilantro Chutney.
