I have been eating a lot of chicken lately and I wanted something different. I had a package of ground beef in my freezer so I took it out and decided to make chili as we haven’t had that in a very long time. It was really good and perfect for a November night.
Italian Chili
Serves 6
Ingredients
1 tsp olive oil
Olive oil cooking spray
2 lbs. lean ground beef (93/7%)
2 lbs. lean ground beef (93/7%)
2 tbsp. garlic powder
1 tsp chili powder
1 tsp dried oregano
1 tsp dried basil
1 tsp dried cumin
1 large yellow onion, diced
1 green or red pepper, diced
6 cloves of garlic, minced
2 (15oz) cans of diced tomatoes
2 (8 oz) cans of tomato sauce
1 (15 oz) can of cannellini beans
1 tsp chili powder
1 tsp dried oregano
1 tsp dried basil
1 tsp dried cumin

1 green or red pepper, diced

2 (8 oz) cans of tomato sauce
1 (15 oz) can of cannellini beans
1 (15 oz) can of kidney beans
salt and pepper to taste

Directions
Spray a large non stick Dutch oven with the cooking spray and the tsp of olive oil. Over a low-medium flame, when the pot is hot, add the ground beef and break up the large pieces with a wooden spoon. Brown meat for about 3 minutes, stirring occasionally. Stir in all the seasonings and cook for about 2 minutes. Add the onions, garlic and peppers. Stir and cook for another couple of minutes. Add the beans, tomatoes and tomato sauce. Stir to combine. Cover and simmer for about 2 hours. Stirring occasionally. Taste and re-season. Add the grated cheese and serve into large bowls.
