Quinoa (pronounced Keen-wa). It has ancient origins in South America dating back over 5000 years to the lost Inca civilization. Quinoa is very healthy and has a lot of protein in it as well as a lot of minerals and is also gluten-free. This is a perfect summer salad that can be eaten as a side dish or even alone. Lemon and Herb Quinoa Salad
Serves 4-6
Ingredients
1 cup quinoa cooking according to package directions and let cool
1 cucumber, seeded and cut into small chunks
1 cup grape or cherry tomatoes, halved
2 scallions, sliced thinly
3 tbsp. basil , chopped
1 tbsp. mint, chopped
2 tbsp. flat leaf parsley, chopped
juice of a small lemon
1/4 cup extra virgin olive oil
salt and pepper, to taste
Directions
In a large glass measuring cup mix all ingredients together except the quinoa. Let stand for about 30 minutes so the flavors can meld together. Once the quinoa is cool, add the dressing and mix well. Chill for at least 30 minutes in the refrigerator. Serve.
