When I don’t know what to make for dinner, I always turn to chicken as it’s so versatile. I decided to use a lemon basil marinade which makes the chicken very flavorful and delicious. If you would like to see how I made it, keep reading!
Lemon Basil Chicken
Serves 4-5
Ingredients
4 large skinless boneless chicken breasts
Juice of 1 lemon, plus extra slices for garnish
2 tbsp. Dijon mustard
3 tbsp. Basil infused olive oil, or extra virgin olive oil
1 tsp. dried oregano
2-3 tbsp. fresh basil, chopped plus whole leaves for garnish
1 tsp. salt
1/2 tsp. pepper
Directions
To a large glass measuring cup add all the ingredients except the chicken. Mix well and let sit for about 30 minutes so the flavors can meld together. Place chicken in a large ziploc bag and add the marinade into it. Zip up the bag and massage the marinade into the chicken and place in the refrigerator for at least 2 hours, turning the bag after about an hour or so.
Before you are ready to grill take your chicken out of the refrigerator and let sit on the counter for about 15-20 minutes to get close to room temperature. Preheat grill to high. Place chicken on the grill and close the cover. Grill on high for about 2-3 minutes on each side to sear the meat. Turn the heat down to medium low, open the cover and grill chicken for about 20 minutes, turning frequently. When done place chicken on a platter and cover with tin foil for about 5-7 minutes and let it rest. Slice chicken and serve with extra basil and lemon slices, if desired.
