A real fast weeknight side dish…only 7 ingredients and 4 of them are salt, pepper, oregano and olive oil. I absolutely love potatoes…they are one of my favorite side dishes and they are so versatile and can be made so many different ways. We had these last night and they were really good.
2 large potatoes peeled and sliced into 1 1/2 inch rounds
1/3 cup fresh lemon juice
1/4 cup extra virgin olive oil
4 smashed garlic cloves
4 oregano sprigs or 1/2 tsp. dried oregano
salt and pepper to taste
Directions
Place the potatoes to an oven proof skillet and add the lemon juice, olive oil, garlic cloves, oregano, salt and pepper. Add enough water to come half way up the sides of the potatoes. Cover, bring to a boil and cook for 5 minutes. Uncover and roast at 500 degrees for 30 minutes. Remove from oven and serve.*
Note: Be very careful when taking the skillet out of the oven as it will be BURNING hot….the other night I forgot to use an pot holder and I took something out of the oven with my bare hand and I burned myself very badly. If by chance you do burn yourself, do not put butter or water on it, milk will take the pain of a burn away within seconds.
