Quinoa (pronounced Keen-wah) is a grain that originates in South America. Quinoa is very healthy as it contains lots of protein and fiber. It is also high in phosphorus, magnesium, iron and is gluten free. Quinoa is a very versatile food as it can go with many different flavors and foods. I decided to make mine with a Mediterranean type of theme. If you would like the recipe for the Mediterranean Quinoa, keep reading.
Mediterranean Quinoa
Serves 4
Ingredients
1 cup Quinoa cooked according to package directions
1 (15 oz) can of diced or crushed tomatoes, drained
2 tbsp. tomato paste
2 garlic cloves
1 tbsp. capers
1/2 tsp. oregano
1 tbsp. extra virgin olive oil
salt and pepper, to taste
Directions
In a food processor add all the ingredients except quinoa and olive oil. Process until chunky-smooth.
In a large non stick Dutch oven heat the olive oil and add the tomato mixture and cook until thickened into a paste, stirring occasionally. Cook for about 10 minutes. When done, add to the Quinoa and mix well. Serve!

Quinoa is definitely over the top healthy…Not sure I have quite developed the taste for it. This looks delightful. I will need to revisit.
