I thought a perfect way to add some zing to tuna salad is by making a zesty Mediterranean tuna salad. It turned out really good and makes the perfect lunch. I also love the flavor combination of the fresh herbs, artichoke hearts and capers. If you want to see how I made it and get the recipe, keep reading.
Serves 1-2
Ingredients
2 (5 oz) cans solid white tuna in water, drained
2 heaping tbsp. fat free or light mayonnaise (you can use regular if you want)
3-4 marinated artichokes roughly chopped
1 tbsp. capers, drained
2 tbsp. fresh basil, chopped
1 tbsp. fresh rosemary chopped
1/4 tsp. freshly ground black pepper
dash of Sriracha hot sauce, more if you like it real spicy
Directions
Mash tuna in a medium bowl. Add the rest of the ingredients and mix well. Chill for about 30 minutes to an hour and serve.
Enjoy!

Never thought about putting artichoke hearts, fresh rosemary or capers in my tuna salad, but I will now!
