I recently bought myself these adorable little appetizer spoons and I was thinking what could I put on them. Well I came up with the idea of Mixed Bean Salad Spoons which is a mixed kidney bean salad and oh so good and quite easy. It is not only great looking but very healthy as it’s loaded with fiber. Mixed Bean Salad Spoons
Serves 6
Ingredients
2 (15 oz) cans Dark and Light kidney beans, rinsed and drained
2 stalks celery, finely diced
2 tbsp. red onion, finely diced
2-3 tbsps. chopped fresh parsley
3 tbsps. extra virgin olive oil
2 tbsps. balsamic vinegar
salt and pepper, to taste
Directions
Mix all ingredients together in a large bowl. Cover and refrigerate for at least an hour so all the flavors meld together and the salad gets chilled.
