I was looking for an Asian salad dressing and I found this one in the new issue of Cooking Light magazine. It looked really delicious and simple to make. This salad will go perfect with any type of meal and you can also eat it alone. I changed it up a bit, so if you want to see how I made my Mixed Greens with Hoisin Sesame Vinaigrette, keep reading.
Mixed Greens with Hoisin Sesame Vinaigrette
Serves 4
Ingredients
2 tbsps. vegetable oil
1 tbsp. rice vinegar
2 scallions, chopped finely
2 tsps. fresh lemon juice
2 tsps. hoisin sauce
1 tsp.dark sesame oil
2 garlic cloves, minced
salt and pepper, to taste
6 cups mixed greens
1 cup grape tomatoes
1 cucumber, roughly chopped
1/4 cup radishes, finely sliced
Directions
In a large glass measuring cup, mix together the oils, vinegar, lemon juice, hoisin sauce, garlic, salt and pepper. Set aside and let the flavors meld for at least a half hour.
In a large salad bowl add all the vegetables. When ready to serve pour the dressing over the salad and toss.
