It’s no secret that I love my fresh vegetables and broccoli is definitely a big favorite of mine. I can basically eat it any way, including steamed, but if I want my family to eat it, then it has to be cooked with some flavor. Let’s face it plain broccoli can be boring but this recipe takes it up to the next level by adding some more fresh produce to it, oranges and orange zest. Broccoli and oranges have such beautiful colors, and since my motto is “Eat Foods With Lots of Colors“, it is perfect! Broccoli is a very healthy vegetable as it’s packed with a lot of fiber, protein and potassium. It’s also very low in sodium and fat. If you are struggling to get your kids to eat their vegetables, try this Orange Broccoli recipe that I think your kids will like. It is very easy to make and is perfect for a weeknight side dish or a side dish for when you are entertaining as it makes a beautiful presentation. 4 cups steamed broccoli florets, you want them crisp-tender, you don’t want it mushy (you can definitely steam the broccoli in the microwave)
2 tbsp. orange juice
1 tbsp. honey
1 tsp. fresh grated orange zest
1/2 cup orange sections
2 green onions, chopped
salt and pepper, to taste
In a large glass measuring cup add the orange juice, honey, salt and pepper and mix well. To a bowl add the broccoli, orange sections, green onions and toss well. Pour the dressing over and sprinkle on the orange zest.
