Not only are sweet potatoes tasty but they are really good for you as well. They are loaded with potassium and lots of vitamins. Here is a very simple recipe using fresh sweet potatoes, orange marmalade and butter.
4 medium sweet potatoes, peeled and cut into chunks
2 heaping tbsp. orange marmalade
2 tbsp. butter
1/2 cup chicken broth
1/2 cup half and half
salt and pepper, to taste
In a medium pot add sweet potatoes and cover with salted water. Bring to a boil, lower the heat and simmer until fork tender, 15 to 18 minutes. Drain cooked sweet potatoes and return pan to stove. Melt 2 tablespoons butter and combine with marmalade and the broth and half and half. Add potatoes and mash, season with salt and pepper.
