Being a Weight Watchers member teaches me to eat very healthy but without sacrificing flavor. I also look for recipes with lots of fresh vegetables in my diet as I am a total fresh veggie junkie! I will say it over and over, eat foods with lots and lots of color!! This tilapia recipe is very healthy but packed with a lot of flavor. It is oven steamed with basically no fat at all so it’s perfect for people watching their fat and calorie intake.
Oven Steamed Herb Tilapia and Vegetables with Lemon Mayo
Serves 4
Ingredients
4 tilapia fillets
4 tbsp chopped fresh rosemary, parsley, thyme or whatever you have on hand
2 cups julienned carrots
2 cups julienned zucchini
1 lemon sliced thinly
1/2 cup low fat or fat free mayo
1 scallion, sliced thinly
1 tsp. lemon peel
1 tbsp. lemon juice
salt and pepper, to taste
Olive oil cooking spray
Directions
Preheat oven to 350 degrees
Spray an oven proof baking pan with the cooking spray and lay the carrots and zucchini in the pan. Spray the tilapia with the cooking spray. Sprinkle with the salt, pepper and fresh herbs. Lay fish over the vegetables in the pan. Place lemon slices on top of fish. Cover and oven steam for about 15-20 minutes.
Meanwhile mix the mayo, scallions, lemon peel and lemon juice together in a small bowl. When fish is done remove the foil and bake for another 5 minutes until done. Serve with the Lemon Mayo.
