I love bread pudding and I don’t know why I don’t make it more often. I got this Pineapple Bread Pudding recipe from my friend Mary in Scotland. Thanks Mary :o) It’s light and perfect for this time of year. It really is quite delicious, perfect for a dessert with a cup of coffee or even in the morning as it’s not too sweet. Pineapple Bread Pudding
Serves 6
Ingredients
4 eggs
1 cup of sugar
1/4 cup melted butter
2 Tablespoons of flour
1 teaspoon vanilla
1 8 oz can crushed pineapple
4 slices cubed bread
Cooking spray
Directions
Preheat oven to 350 degrees. Spray a 8 x 8 glass baking dish with cooking spray. Beat eggs, add butter, sugar, pineapple, vanilla and flour together. Mix in cubed bread. Let the bread soak into the egg and pineapple mixture for about 15 minutes. Bake for about an hour. Let cool before serving. Sprinkle with powdered sugar.
