It can’t get any simpler than this rice dish. I have been eating this rice since I am a kid. My mother would make it all the time. It’s fast, it’s easy and everyone loves it. So actually it’s my Mom’s recipe…..thanks Mom….LOL!!!
Really simple rice with sauteed onions
1 cup long grain white rice
2 1/4 cups water
1 large onion diced
2 tbsp. olive oil, butter or margarine
salt and pepper to taste
Saute onions and set aside. Cook rice according to package directions. Mix the onions in with the rice. Season with salt and pepper.
This dish can be made ahead of time. Just put it in a casserole dish with a cover and then just heat it up in the oven at about 200F degrees until hot.
Variation: You can also add a can of sliced mushrooms if you want
