There is nothing like roasted vegetables. I feel that the roasting really brings out the flavor of the vegetables plus it gives it an added flavor. Not to mention how fast and easy it is. I happen to love asparagus and they are very good for you as well.
Roasted Asparagus
Serves 4
Ingredients
1 bunch fresh asparagus
salt
pepper
extra virgin olive oil
Directions
Preheat oven to 450 degrees. Cut off the tough bottoms. Lay asparagus on a baking sheet lined with foil. Drizzle with the olive oil and sprinkle with salt and pepper. Roast for 15-20 minutes.
I love asparagus but just can’t seem to find it here in Greece!
