This is a very easy dish to make and it’s so healthy. You can basically use any veggies that you have on hand. I used mushrooms, summer squash, red onions, potatoes and peppers.
Roasted Vegetables
Serves 4
Ingredients
1 (10 oz) pkg baby bella or white mushrooms, sliced in half or quarters depending upon the size
2-3 large red, green, or orange peppers, cut into 1 inch pieces
4 medium red skinned potatoes, cut into quarters or eighths
2 yellow or green summer squash cut in half length wise and then sliced into 1/2 inch pieces
6 large cloves of garlic, skin peeled but left whole
1 medium red onion, cut into quarters and then broken up
2 tbsp. extra virgin olive oil
salt and pepper, to taste
Directions
Preheat oven to 400 degrees.
To a casserole dish add all the vegetables, olive oil, salt and pepper. Toss well. Roast for 45 minutes and then toss vegetables again. Roast for another 30-45 minutes, or until potatoes and vegetables are all soft.
