I was recently sent a cookbook entitled “Easy Recipes for the Hurry Home Cook, Healthy Indian Vegetarian Cooking” by Shubhra Ramineni which I will also be doing a review on. This recipe was not only easy but really delicious and packed with lots of flavor and you will notice that there are only 8 ingredients so it’s definitely a quickie. Sauteed Cumin Potatoes
Serves 3-4
Ingredients
1 lb. medium russet boiled potatoes, peeled and cut into 3/4 inch chunks
1 tbsp. vegetable oil
1 tsp. cumin seeds
1/4 tsp. ground turmeric
1/4 tsp. ground cayenne pepper, more if you like it spicy
1/2 tsp. salt
1/4 tsp. ground black pepper
Juice of 1/2 lime
Directions
To a medium saucepan add the oil over medium heat and when the oil is hot add the cumin seeds. Let brown for 10 seconds but do not burn. Add the potatoes and the rest of the seasonings and stir so all the seasonings are incorporated with the potatoes.
Lower the heat to medium-low and cook for 5 minutes stirring frequently. If anything sticks, scrape up the brown bits and mix it with the potatoes. This will add to the flavor. Turn off the heat and add the lime juice. Stir. This dish can be eaten hot or at room temperature.. You can even freeze it!
