I was in the mood for shrimps and something Spanish so I decided to make Shrimp with Green Sauce (Camarones con Salsa Verde) which is so typically Spanish. I have had it a couple times in a Spanish restaurant that I go to and I just love it so I decided to make it at home. It’s very easy to make. If you would like to make it too, keep reading.
Shrimp with Green Sauce
Camarones con Salsa Verde
Serves 4
Ingredients
2 lbs extra large – jumbo shrimp (16-20 count)
½ cup frozen peas, thawed
½ cup white wine
2 tbsp. extra virgin olive oil
8 cloves garlic, chopped
1 cup parsley, roughly chopped
½ cup scallions, roughly chopped
Salt and pepper, to taste
Directions
Add wine to a sauce pan and bring to a boil and cook until the alcohol reduces. Reduce heat and add garlic,parsley, scallions, salt and pepper. Cook the garlic for about 2 minutes so it doesn’t have the “raw” garlic flavor.
Transfer mixture to a blender and add 1 tbsp of the oil. Puree until smooth. Set aside.
Add the remaining tablespoon of oil to a non stick Dutch oven over medium low heat and add shrimp. Cook until just pink, approximately 5 minutes. Turn off heat and add the peas and the sauce to the pot. Stir to combine and serve.
