Happy 4th of July everyone!! I was just going to make hot dogs today and not fuss but then I thought I wanted something better so I decided to make chicken. I wanted a nice glaze to go on it so I came up with this concoction. You can use this on chicken, ribs, even shrimp and fish. If you want to see how I made it, keep reading!
Smokey Orange Pineapple Glaze
Makes about 1 1/2 cups
Ingredients
1 cup pineapple preserves
1/2 cup ketchup
1/2 cup orange juice
1 tsp. liquid smoke
dash Worcestershire sauce
1 chipotle pepper in adobo sauce, chopped, seeded and membranes removed
Directions
Combine all ingredients in a small saucepan and mix well. Bring to a boil. Lower heat to a simmer and cook for about 10 minutes, stirring frequently. You want all the flavors to meld together. Let cool a bit before you use it. Enjoy!
