I love Latin food. The flavors are amazing and they all go so well together. This is a chicken stew made with all the flavors of Latin cuisine. A sofrito is the base for most every Latin dish. It consists of onions, garlic, red and/or green peppers, tomatoes and cilantro. What I usually do is make a big batch of the sofrito and then portion them out into ziploc bags and freeze them. They freeze very well.
Spanish Chicken Stew
Serves 4-6
Ingredients
1 tbsp. extra virgin olive oil
1 medium-large onion chopped
6 cloves garlic, chopped
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 (15 oz) can diced tomatoes
1 tsp. ground cumin
1 tbsp. garlic powder
1 packet Sazon
salt and pepper, to taste
2 cups chicken broth
6 skinless boneless chicken thighs
2-4 tbsp. cilantro, chopped
Directions
In a large non stick Dutch oven heat the oil over low-medium heat and saute the onions and garlic for about 3 minutes. Add the peppers, tomatoes, cumin, cilantro, Sazon and the salt and pepper. Stir to combine. Add the chicken to the sofrito and then add the chicken broth. Cover the pot and simmer for 30-45 minutes, until the chicken is done.
