Now that the weather is staying cold, I love to have soups with dinner. I was thinking that I haven’t had split pea soup in a while and decided to make it. Split peas make for a very nice hearty soup. It goes a long way as it’s very thick and you can keep adding broth to thin it out.
Split Pea Soup
Serves 8
Ingredients
1 lb. dry green or yellow split peas
2 qts. chicken or vegetable broth
2 large carrots, diced
2 stalks celery, diced
1 large onion, diced
salt and pepper, to taste
Directions
In a large stock pot bring the split peas and broth to a boil. Lower the flame and add the vegetables and salt and pepper. Cover and simmer for an hour and a half or until split peas have fallen apart. You might need to add more broth. Taste and re-season, if necessary.

Split pea soup is one of the first soups I make when the weather turns cooler. I grew up eating this soup! It is easy to prepare, comforting and it definitely fills your belly.
