I had some peppers that I wanted to use up so I thought stuffed peppers would be perfect. You can stuff them with ground beef, chicken or turkey. Stuffed Peppers
Serves 5
Ingredients
6 large bell peppers (any color) (I like red the best as I find they are the sweetest)
1 1/2 lbs ground beef, turkey or chicken
1/2 cup cooked long grain rice
1 (28 oz) can crushed tomatoes
1 tbsp. Worcestershire sauce
1 tsp. oregano
1 tbsp. garlic powder
1 tbsp. onion powder
salt and pepper, to taste
Directions
Preheat oven to 350. Cook rice according to package directions. When done, set aside. Cut the tops off the peppers and remove the seeds and membranes. Place them in a shallow baking dish. You may need to cut off a bit of the bottom so they stand straight up in the pan.
In a large non stick skillet cook ground beef until brown. Breaking up the larger pieces.
In a large bowl mix together the ground beef, rice, oregano, garlic and onion powders, Worcestershire sauce, salt and pepper and half of the canned tomatoes. Spoon equal amounts of the beef mixture into the peppers. Top with remaining tomatoes.
Bake, uncovered for 1 hour or until the peppers are soft. Spooning the sauce over the peppers a couple times until done.
