I started to make Indian food at home and I really like it. All the different spices make for tons of layers of flavor. This fish was excellent! My family and I loved it.
Tandoori Tilapia
Serves 5
Ingredients
5 Tilapia filets
1/3 cup white wine vinegar
6-8 fresh garlic cloves, chopped
1 tbsp. fresh ginger, chopped
1 tbsp. ground coriander
1 tbsp. ground cumin
2 tbsp. olive oil
1/4 cup water
1 red bell pepper, sliced thinly
1/4 tsp. cayenne (more if you like it real spicy)
salt, to taste
2 tbsp. fresh cilantro, chopped
Directions
To a blender add all the ingredients except fish, peppers and cilantro. Process until smooth.
Lay the fish in a baking pan and pour the marinade over the Tilapia. Cover and refrigerate for at least 2 hours so the flavors meld together.
Preheat oven to 375 degrees. Uncover the baking pan and place most of the sliced peppers over the fish (reserve a few for garnish). Bake for about 15 minutes or until fish is done. Serve on a plate with the remaining peppers and cilantro for garnish.
