My older son Alex is home from college for Passover/Easter week. While he is has been home, he works in a law firm in New York City. Tonight he came home a couple hours after the rest of us ate dinner. When he came home I asked him what he wanted to eat. After he thought about it for a few minutes he said an omelet and I asked him what he wanted in it. I told him what I had in the fridge and he decided on scallions, red peppers and turkey bacon. I said that we are going to call it The Alex Omelet. So there you go folks…this is The Alex Omelet in honor of my older son!!
The Alex Omelet
Serves 1
Ingredients
3 eggs
3 tbsp. water
2 tbsp butter
1 red pepper diced finely
1 scallion sliced thin
4 slices of turkey bacon, chopped
salt and pepper to taste
Directions
In a bowl crack eggs and beat well. Add in water, peppers, scallions and bacon and salt and pepper. Mix well. In a sauté pan on medium low heat add the butter and when it is melted add the egg mixture. Let it cook until the eggs are mostly cooked through and then carefully turn it over into an omelet.
