My cousin got tickets to see a taping of The Chew here in New York for September 11, 2013. I had a really great time watching them tape the show and I got to see Mario Batali and Gloria Estefan who I am a really big fan of. Gloria is quite delightful and filled with personality. Gloria was helping to make Chocolate Truffles which looked absolutely amazing and very easy do. I think that will be on my bucket list of things to make and blog about. Michael Symon, who is also a co-host was making Fluke Milanese which looked really good and quite easy to make. I didn’t have any fluke on hand, so my version is made with Tilapia. I also made mine a little different than he did. Tilapia is a very versatile white fish that goes great in any recipe. To see how I made my Tilapia Milanese, keep reading.
Tilapia Milanese | |
- 4 large Tilapia fillets
- 1 cup flour
- 1 cup Panko bread crumbs
- 2 large eggs, beaten
- ¼ cup extra virgin olive oil
- Salt and pepper, to taste
- 2 cups baby arugula
- 1 cup tomatoes cut into large chunks
- ½ small red onion, thinly sliced
- 4 tbsp. extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
- In a large bowl add the arugula, tomatoes and onions and toss. To a large glass measuring cup add the lemon juice, oil, salt and pepper. Mix well. When ready to serve drizzle over the salad.
