As many of you know, I absolutely love fish and seafood. Not only is it really tasty but it’s so healthy. Imagine that….a healthy and tasty food! LOL!!! I found this recipe on a fellow food blogger Libby’s site called Lemony Thyme. Libby has an absolutely wonderful food blog with amazing pictures!! Please go check out her site, you won’t be sorry. Libby uses grouper in her recipe but since the store that I purchase my fish and seafood didn’t have grouper, I used tilapia instead. I also made mine a bit lower fat by using fat free mayo. Feel free to use whatever you have on hand.
Tilapia with a Horseradish and Herb Crust
Serves 4
Ingredients
4 large tilapia fillets
1 cup bread crumbs
3 tbsp. flat leaf parsley, chopped
1/2 tsp. fresh thyme, chopped
1/2 tsp. fresh rosemary, chopped
3 tbsp. prepared horseradish (there are two kinds…one with beets and one without. I used the one with beets cause that is what I had on hand. Basically the difference is the color as you really don’t taste the beets at all)
1/4 cup mayo (regular, low fat, or fat free)
salt and pepper, to taste
2 scallions sliced thin for garnish
cooking spray
Directions
Preheat oven to 350. Spray a large baking pan with the cooking spray. Combine all the ingredients except the fish in a medium bowl. Lay the fish in the baking pan and season both sides with salt and pepper. Spread the crumb topping on each fillet and bake uncovered for about 15-20 minutes. Garnish with the scallions.
