This is a really easy fried rice recipe. Today I made it without chicken or shrimp but you certainly can make it with that if you want. Use about 1/2 pound of shrimp or chicken. Just make sure to cut it up in small pieces first.
Vegetable Fried Rice
Serves 4
Ingredients
2 tbsp. canola oil
2 large eggs, beaten
6 scallions, sliced thinly
1 onion, diced
1 tbsp. minced ginger
1 cup frozen peas, thawed
2 tbsp. low salt soy sauce
2 cups cold white rice
2 tsp. rice vinegar
2 tsp. sesame oil
Directions
Heat 1 tbsp. of the oil in a large non stick saucepan over medium high heat. Add the eggs and cook, stirring occasionally, until scrambled and cooked through, about 2 minutes. Transfer to a plate.
Heat remaining 1 tbsp. oil in the same pan. Add the scallions, onions and ginger; cook, stirring frequently and until onions are soft about 5 minutes. Add the rice, peas, soy sauce, vinegar and sesame oil; cook, stirring occasionally, until heated through, about 4 minutes.
Add the egg and shrimp/chicken (if using); cook, stirring occasionally, until heated through, about 3 minutes.
