I had some zucchini that I wanted to use up so rather than just grilling them, I decided to make zucchini boats. I think they are much more interesting, don’t you and they are also really easy to make and lots of fun too! To see how I made them, keep reading.
2 medium zucchini, cut in half lengthwise, carefully scoop out the insides leaving about 1/4 inch rim
1/2-3/4 cup panko bread crumbs
1/4 chopped parsley
1 garlic clove, chopped
2 tbsp. olive oil
salt and pepper, to taste
Preheat oven to 400 degrees. In a medium bowl add all the ingredients except the zucchini and mix well. Spoon in the bread crumb mixture into the hollowed out zucchini. Press down with your fingers so the mixture stays inside.
Bake for about 30 minutes until zucchini is soft.
