Some New York dishes are worth learning to make yourself, either because you live nowhere near a good slice joint or because you want to understand why the original works. This collection translates the city's classics — dense cheesecake, deli-style sides, pizza-night staples — into recipes written for ordinary home equipment and supermarket ingredients.
